It’s an ordinary practice that ordinary people have kept for thousands of years, and you can learn it the same way you learn anything else: slowly, in small steps, with a plan.

The hours include sleep. A twelve-hour fast is dinner at seven and breakfast at seven — you’re asleep for most of it. That’s not a trick; it’s how the ladder stays gentle.
